Daily tastings during the vinification process allow us to decide the date when the vats are drained. This is the point at which we separate the free-run juice from the press juice for malolactic fermentation. The wine is racked by gravity in order to limit the number of mechanical actions carried out on it. The contents of the different vats are combined a month before bottling. Earth filtration takes places after fining, if necessary.
Tasting
The wine has a fine cherry-red colour. Its elegant, velvety nose has notes of red fruits (raspberries and cherries). After aeration it develops light leather notes. This warm, dense wine is supported by powerful, full-bodied tannins. This is a mature wine and suggests fine potential with a melting mouth feel and a very fine balance between red fruit flavours and tannic structure. Good length.
