Made purely from 40 year-old Sémillon, the grapes are harvested after the berries have been tasted for optimum maturity. They are then destemmed, passed along a sorting table and pressed. The resulting juice is sent to a stainless steel vat where the must is left to settle at a low temperature. After 48 hours, the juice is heated to 14°C to start the fermentation process, which takes place at a low temperature to prevent any loss of flavour. After fermentation the vat is racked, filtered through earth and fined before bottling some months later.
Tasting
The particular composition of this wine differentiates it from traditional white Bordeaux thanks to its fruity flavours and roundness. These characteristics make it ideal as an aperitif or an accompaniment to fish and shellfish as well as white meats and some soft cheeses.
